Founded in 2007, Ormiale vineyard is located in the north of the Entre-deux-Mers, 15 km south of St-Emilion and 8 km from Castillon la Bataille. The red wine, simply called "Ormiale", is vinified and bottled at the property under the appellation Bordeaux supérieur contrôlée – Grand Vin de Bordeaux. Fabrice Domercq works with four grape varieties: Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot. The vines are grown biodynamically with Demeter certification, grapes are picked manually and transported in small crates to the winery. De-stemming has been done by hand since 2010. Part of the harvest is vinified in new oak barrels. The rest in truncated french oak and stainless steel vats. The vat loaded fruit is left to ferment unsulphured and the fermentation is assisted with natural yeasts.
